Bữa tối chiếm một nửa trải nghiệm ở ryokan: kaiseki (bữa ăn truyền thống nhiều món) làm từ nguyên liệu địa phương theo mùa, thường đã bao gồm trong giá cùng bữa sáng. Các nhà nghỉ trong mục này là những nơi du khách Nhật luôn khen ngợi vì chính món ăn — chứ không chỉ vì khẩu phần hào phóng.
Phong cách mỗi nơi một khác. Có nơi phục vụ bữa tối tại phòng, có nơi ở phòng ăn riêng hoặc tại quầy, và nhiều nơi xây dựng thực đơn quanh một đặc sản vùng như cua mùa đông, wagyu địa phương hay cá sông. Các bài đánh giá của chúng tôi cũng nêu những nơi người đánh giá thấy món ăn không đồng đều, quá nhiều hoặc không xứng với giá, và liệu có đáp ứng yêu cầu ăn chay hay dị ứng không.
